Mary Louise Duncan, lovingly known as Nanie, was the epitome of selflessness and the best cook anyone could hope to meet. Every event she hosted was filled with her decadent foods and desserts, leaving a lasting impression on all who tasted them. Though she is no longer with us, her memory lives on through the cherished recipes she left behind, continuing to bring joy and warmth to family gatherings.
Venison or elk meatloaf
2 eggs
1 can (8oz) tomato sauce
1 medium onion, finely chopped
1 cup dry bread crumbs
1 1/2 tsp salt
1/8 tsp pepper
1 1/2 lb ground venison or elk
2 tblsp brown sugar
2 tblsp spicy brown mustard
2 tblsp vinegar
In a large bowl, lightly beat eggs. Add tomato sauce, onion, crumbs, salt, and pepper. Add venison or elk and mix well. Press into greased 9x5 loaf pan. Combine brown sugar, mustard, and vinegar and pour over meatloaf. Bake uncovered at 350 for 70 minutes. Makes 6 to 8 servings.
